Apple Crumble




Ingredients:

  • 50g honey crisp apple, diced tiny

  • 20g rolled oats

  • 10g all purpose flour (for more protein I use keto flour by King Arthur)

  • 10g vanilla whey powder

  • cinnamon to taste

  • 5-8g monkfruit brown sugar replacement

  • Olive oil spray

  • Low fat whipped cream

  • Optional - Yasso vanilla


Directions:

  1. Saute your tiny diced apples on medium heat with water and cinnamon. Be sure the water never evaporates, if it gets dry, add more water. The apples should look golden brown, if the cinnamon seems to disappear, add more!

  2. Prepare the crumble mixture. In a bowl, mix the roll oats, flour, whey powder, monkfruit and cinnamon

  3. Once the apples are soft, grab a small ramekin and spray it with olive oil. Add the cooked apples, top with the crumble mixture and bake at 425 for 6 minutes.

  4. Optional but super tasty. You can find greek yogurt vanilla flavor and top it on top of the warm apple crumble to mimic ice cream!
