Cottage Cheese Blueberry Donut


Ingredients:


Muffin batter

  • 1 cup low fat cottage cheese (I like good culture brand)

  • 1 scoop vanilla whey protein powder

  • 1 1/4 cup almond flour

  • 1/4 cup agave

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 cup fresh or frozen blueberries (frozen gives it the marble look)

  • 1/4 tsp salt



Directions:


  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.

  2. In a blender or food processor, combine the cottage cheese, honey, eggs, & vanilla extract.

  3. In a separate bowl mix the protein powder, almond flour, baking powder, and salt.

  4. Add the wet ingredients to the dry. Do not over mix.

  5. Divide the batter in half. In one half, fold in the blueberries and lemon zest, then blend until the blueberries are slightly broken down, creating a marbled effect. Or keep the blueberry's whole. Whatever you prefer.

  6. Spoon the plain batter and blueberry batter alternately into the donut pan, then use a toothpick to swirl the batters together slightly to create a marble effect.

  7. Bake for 12-15 minutes, or until the donuts are set and a toothpick inserted comes out clean.

  8. Let the donuts cool in the pan for 5 minutes, top with glaze if you would like.
