High Protein Carrot Bread

Ingredients
½ tsp baking powder
½ tsp cinnamon
½ tsp to stevia
⅛ tsp nutmeg
1 tsp light brown sugar
low cal oil spray
1 egg
3 chopped pecans (optional)
1 Tb grated carrot
35g Fairlife milk
50g non fat plain Greek yogurt (Chobani)
25g protein powder (Vanilla ice cream whey or Unflavored Truvani)
35g Kodiak Pancake mix
Directions:
Preheat oven 350 degrees
Hand mix all ingredients
Oil mini loaf pan or any other small pan/container
Pour mixture into baking pan
Bake for 20 minutes. Use a toothpick to make sure the center is fully cooked and not runny. Don’t over cook or it’ll be too dry.
Toppings options and ways to enjoy!
- Spread Oikos Vanilla Pro Greek yogurt on top and sprinkle chopped pecans & grated carrots on top!
- Enjoy with Oikos Vanilla Pro Greek yogurt, chopped pecans, grated carrots on the side.
- Enjoy with a glass of milk (TIP: Fairlife milk has more protein and less fat)
- Spread a thin layer of light butter on top and enjoy!!
