Mushroom Zucchini Tostada

Ingredients

  • Fajitas

    • Mushrooms, diced

    • Zucchini, diced

    • Onions, diced

    • Salt and pepper

    • Fresh jalapeño, diced

  • Toppings 

    • 20 g avocado, diced with lemon juice and garlic salt

    • 10g fiesta blend cheese 

    • 1/2 cup pea protein crumble (cooked as per the packet, I use the brand: Puris Pantry + add taco seasoning) 

    • 1 tostada shell 

  • Sauce

    • 70 g Greek yogurt

    • Fresh jalapeño

    • Lemon juice

    • 40 g avocado

    • 1 clove garlic



Directions:

  1. Cook fajitas: Sauté in olive oil spray. I did it in a cast iron pan. 

  2. Make sauce: Blend all ingredients, add a little bit of water if needed

  3. Plate: Add fajitas, and protein on top of tostada shell. Top with fiesta cheese and diced avocados. Add the sauce on the side so you can spoon a good portion with every bite without it getting soggy
