Mushroom Zucchini Tostada

Ingredients
Fajitas
Mushrooms, diced
Zucchini, diced
Onions, diced
Salt and pepper
Fresh jalapeño, diced
Toppings
20 g avocado, diced with lemon juice and garlic salt
10g fiesta blend cheese
1/2 cup pea protein crumble (cooked as per the packet, I use the brand: Puris Pantry + add taco seasoning)
1 tostada shell
Sauce
70 g Greek yogurt
Fresh jalapeño
Lemon juice
40 g avocado
1 clove garlic
Directions:
Cook fajitas: Sauté in olive oil spray. I did it in a cast iron pan.
Make sauce: Blend all ingredients, add a little bit of water if needed
Plate: Add fajitas, and protein on top of tostada shell. Top with fiesta cheese and diced avocados. Add the sauce on the side so you can spoon a good portion with every bite without it getting soggy
