Spicy Peanut Noodles


Ingredients

  • 150g Palmini noodles

  • Yellow squash

  • Red onion

  • Broccoli (broccolini is my preference)

  • Fresh jalepeno

  • Green onions

Sauce Ingredients

  • Don Chilio, sliced habanero peppers, chile crisp

  • Lemon juice

  • Rice vinegar

  • Minced garlic

  • Soy sauce

  • 10-15g extra crunchy peanut butter


*For extra protein I would add egg whites



Directions:

  1. Saute all the vegetables on medium high (except green onion) in soy sauce and olive oil and set aside

  2. Saute palmini noodes on medium low and green onions separately in olive oil

  3. Whisk together sauce ingredients in a bowl

  4. Once noodles done, add the sauce and lastly the vegetables
