Cottage Cheese Quiche

Ingredients

  • 180g cottage cheese, low fat

  • 1 egg

  • 20g shredded fiesta blend cheese

  • green onions

  • bell peppers, diced tiny

  • salt

  • pepper



Directions:

  1. Blend cottage cheese, egg, salt and pepper

  2. Oil two small ramekins

  3. Pour in mixture into the ramekins

  4. Mix in green onions, bell peppers, and half the cheese

  5. Top off the bowls with the remaining cheese

  6. Bake 375 for 25-28 minutes in a full oven (half the time in a toaster oven)

*Note the dish will be puffy when baking but it will settle when taken out of the oven. Remove and let it cool for 5 minutes
